Rich in taste and content: the Sebadas are a well-known dessert in Sardinia
The Sebadas are fried cheese pasties and a typically Sardinian sweet, very rich in content and taste because of the goat cheese and some honey as garnish.
Ingredients for 4 people
For the pastry: 1 kg flour, 200 g semolina, 150 g lard, water salt.
For the filling: 500 g fresh sheep or goat cheese (can be replaced also with Morzarella although its less intensive in taste), 200 g sugar, some teaspoons of flour, grated orange o lemon rind, honey, olive oli and salt.
Preparation
- Work the flour with semolina, water, some lard and a dash of salt until it becomes a medium consistency. Let it repose for at least 30 min.
- In the meantime grate the cheese and mix it with the flour, the sugar, the grated orange o lemon rind and the salt until it become a smooth cream.
- Roll out the pastry very fine and use a round shape with a diameter of approx. 10 cm to cut out the disks to prepare the Sebadas.
- With a teaspoon place some filling on one disk and cover it by placing a second disk above. Close the Sebadas by twisting its sides.
- Fry the Sebadas in olive oil (temperature about 180 degree Celsius) until both sides are brown.
- The Sebadas are served hot and covered with some honey above them.
